Chickpea Chocolate Chip Cookies

I just love these cookies because they satisfy the craving for a chocolate chip cookie (or two), fill you up and are made with a handful of whole food ingredients from your kitchen.

Ingredients: Sometimes I just need cookies. When I do I make these: ?1 BPA-free can chickpeas, rinsed and drained ?1/2 cup almond butter ?3 tablespoons maple syrup ?1 tablespoon coconut oil ?1 tablespoon vanilla extract ?1/2 tsp cinnamon ?Pinch of sea salt ?1/2 cup @enjoylifefoods chocolate chips Directions: Preheat oven to 350. Line a cookie tray with either parchment paper or a silpat mat. Mix all ingredients (except chocolate chips) well in a food processor then pour mixture into bowl and stir in chocolate chips. Spoon a heaping teaspoon of dough onto cookie sheet. Gently shape dough into cookie shape with wet fingertips and bake for 25-30 minutes, or until golden brown.

Gently shape dough into cookie shape with wet fingertips and bake for 25-30 minutes, or until golden brown.
