This is one of those weeknight favorite meals I come back to again and again. It’s simple, nourishing, and always a hit with the whole family. It comes together quickly, uses pantry staples, and feels like true comfort food without being heavy. Sometimes I’ll make it a day or so ahead so that dinner is ready to be heated up on a busy night.
I love using bison here because it’s naturally lean, rich in iron, and a great source of high-quality protein and B vitamins to support energy. The quick oats add fiber and help keep everyone full and satisfied, while also giving the meatloaf the perfect texture.
BISON MEATLOAF

Ingredients
1 lb ground bison
1 cup instant oats
1 small onion, finely chopped
3–4 garlic cloves, minced
1 large egg
1/3 cup ketchup (plus extra for topping)
1 tbsp Worcestershire sauce
1 tsp sea salt
1/2 tsp black pepper
2 tbsp extra-virgin olive oil
Directions
Preheat oven to 375°F.
In a large bowl, mix oats, onion, garlic, egg, ketchup, Worcestershire sauce, salt, pepper, and olive oil.
Add ground bison and gently mix until just combined (don’t overmix).
Line a loaf pan with parchment paper and press mixture into the pan.
Top with a layer of ketchup.
Bake 45–55 minutes, until internal temp reaches 160°F.
Let rest 10 minutes before slicing.
