My husband has a “thing” towards slow cooked chicken. It drives me crazy that he doesn’t enjoy it because anything cooked in the slow cooker is something that I always love…can’t tell if it’s because it actually tastes great or that it made my life much easier by doing all the work for me. Either way, I finally realized that he actually doesn’t mind chicken THIGHS cooked in the slow cooker. Phew! He says they come out very juicy (as compared to breasts that according to him come out very dry). So, with that, I threw together this little meal and it was a keeper.
Slow Cooker Chicken Piccata
Ingredients:
4 – 6 boneless chicken thighs (you can use chicken breasts if you don’t have a “thing” about how they turn out!)
1/2 cup organic chicken/veggie or bone broth
1/2 cup capers (rinse and drain)
1/4 cup extra virgin olive oil
2 tablespoons lemon juice
1 tablespoon fresh or dried parsley
1 lemon, sliced pretty
sea salt and pepper to taste
Directions:
Place chicken in slow cooker and pour/sprinkle other ingredients on top, layering the lemon slices over the chicken last. Cook on LOW for 6 – 8 hours. (Mine comes out great at 7 hours). Serve over rice or noodles of choice, and/or with a heaping side of greens.
