These days our pancakes are beautifully GREEN!
I simply blend a handful of spinach with 2 eggs in blender (and an optional tablespoon or two of @vitalproteins collagen powder), then mix with a mashed (ripe) banana, a shake or two of cinnamon and 1 tablespoon of coconut flour. They are a yummy way to get greens in for breakfast. A batch lasts 2-3 mornings for us. I hand one to Heather each morning while her and Hanley play and she comes back after a few minutes (baby) signing for more!
