My favorite Instant Pot recipes

I’ve been all about recipe round-up blog posts lately (did you catch my slow cooker recipe round-up post?). Since my Instant Pot is the love of my life in the kitchen (next to my beloved slow cooker), I just had to share a bit about it including the MANY favorite recipes I’ve collected for it. As you will see…NONE of these recipes are my own. When I first got my IP (for Christmas of 2015), it sat in it’s box for months. I had NO idea what it was all about and was way too intimidated to use it. When I finally did take it out, it then sat on my counter for a few more months because I was scared of it (it’s ok, you can laugh at me). Finally, I started googling some recipes only to realize that the thing is a lifesaver in the kitchen! People everywhere were using it and it was saving them time in the kitchen in all different ways. Now, my IP resides on the corner of my counter where I can easily pull it right out as needed (which is at least 3x a week). I am constantly cooking rice in it, hard boiling eggs, cooking vegetables, or putting whole dinners into it to save me time. In the meantime, if you already have one, below are some of my favorite recipes. You may notice, there are no beef recipes on this list and I apologize to all who eat beef for this. I do not eat beef, therefore it’s almost never cooked in our house unless Lammer is preparing it. Anyway, I hope you enjoy them as much as we do in my house.
