It’s a common mistake that people make to think that they must keep pancake batter in the house for those morning when everyone is craving pancakes. It’s not healthy…even the gluten free kinds. And besides, it’s always best to use whole ingredients from scratch for our meals as often as possible. When it comes to throwing your own pancakes together, it doesn’t get much easier than this. This recipe is enough for 2 (double/triple if more are needed).
1 ripe banana
1 tablespoon coconut flour
Mash banana then mix ingredients well and prepare as you would pancakes with a pat of grass-fed butter in your pan. Sprinkle with cinnamon, another pat of grass-fed butter and some maple syrup. I love tossing on some fresh fruit and/or crushed nuts, too. YUM!
