I just love these cookies because they satisfy the craving for a chocolate chip cookie (or two), fill you up and are made with a handful of whole food ingredients from your kitchen.
1 BPA-free can chickpeas, rinsed and drained
1/2 cup almond butter
3 tablespoons maple syrup
1 tablespoon coconut oil
1 tablespoon vanilla extract
1/2 tsp cinnamon
Pinch of sea salt
1/2 cup Enjoy Life chocolate chips
Preheat oven to 350. Line a cookie tray with either parchment paper or a silpat mat. Mix all ingredients (except chocolate chips) well in a food processor then pour mixture into bowl and stir in chocolate chips. Spoon a heaping teaspoon of dough onto cookie sheet. Gently shape dough into cookie shape with wet fingertips and bake for 25-30 minutes, or until golden brown.
